Here it is: Day 1 of my cooking experiment!

I honestly don't know if this will be interesting to read, but maybe. If not, come back in a week. :)
    
Breakfast: Cranberry-Pear Crunch Cereal

I had a series of missteps in the preparation of this meal, mainly because I was trying to make a 4-serving recipe into a 1-serving recipe without measuring anything. I ended up using too much quinoa, way too much soy milk, not enough cranberries. Even still, it turned out alright, not anything to get excited about, but alright. I added flax seeds, which were not in recipe, for extra omega-3s.

Score: 5/10
Will I make it again?: undecided (leaning toward no)

Lunch: Golden Tofu on Toast

In a nutshell: Dijon mustard-brushed tofu, browned in a skillet and then added to slices of heirloom cherry tomatoes between two slices of toast. I don't think I "browned" the tofu quite right - most of the mustard cooked to the skillet - but to compensate, I spread a little more of the mustard on the toast. It ended up being pretty good! The toast could have been a little more toasted, could have used a little more mustard in the sandwich, but otherwise - yum!

Score: 8/10
Will I make it again?: absolutely (with minor changes)

Dinner: Tahini-Vegetable Sandwich

By the time I was done puttering around the house and ready to start dinner, it was really too late to make/wait for the homemade sauce (my original plan for dinner was the High-Protein Pasta). I picked another easy sandwich from the cookbook and made that instead. As with the tofu sandwich I made for lunch, the best part about this was learning how easy it can be to make good food. I never would have thought to make this I toasted two pieces of bread again, spread on tahini, and added sliced heirloom cherry tomatoes and cucumber. Simple. Tasty, too.

Score: 8/10
Will I make it again? yes (will experiment with other veggies)

Non-food news: got in touch with my OB's office - I have my first appointment on Sept. 2! I also started looking at cribs online; so many options to choose from. Think I found one I really, like though. Emailed the link to Theseus so he can take a look, too.

Tomorrow I'm back at my new unit in the morning, submitting paperwork for my promotion packet. In the afternoon I'll be visiting my school (still need to do something about an orientation) and buying missing groceries (too lazy today).

And now - bed!

Cribs, eh? I highly recommend the ones that convert from crib to toddler bed to twin bed. They are a little more $$ but SOOO worth it in the long run..you end up saving money if you think about it. YAY!!!
